Skinny Slabs

Got a sweet tooth but trying to avoid naughty treats for the sake of your waistline? Enter Skinny Slabs, a Cambridgeshire-based bakery that makes delectable diet-friendly, low calorie blondies and brownies that have to be tasted to be believed.

Diet-friendly brownies and blondies… now that’s an oxymoron if ever we’ve heard one. Unbelievably though, there’s a brilliant new bakery in Cambridgeshire called Skinny Slabs, and as the name suggests they make delicious sweet treats that you can enjoy even when you’re trying to lose weight. Don’t believe me? The proof is in the pudding, because each delectable blondie or brownie from the 60-flavour strong range contains between 100 – 150 calories (with the classic brownie only coming in at a mere 98 cals). Plus, owner and baker Cathy set up the business after both she and her mum successfully reached their target weights while eating the slimline bakes, which became rather popular at the local slimming club too!

So, if your diet attempts keep getting derailed by the lure of the biscuit tin and your inability to say no to your nagging sweet tooth, then you probably need some Skinny Slabs in your life. Even if you’re not trying to lose some pounds, these heavenly bakes will appeal – after all, we could all do with a lot less sugar in our diets!

Anyone who’s tried a “healthy” cake before will have bad memories of reaching for the nearest glass of water straightaway to combat the dry texture or find that the bake simply disintegrates in your hands before it’s even reached your mouth. Not so with Skinny Slabs. A bit like Heinz and Coca-Cola, Cathy’s magical baking methods are quite naturally top secret, but I can tell you she’s spent a lot of time sourcing brilliant plant-based sugar alternatives with 0 calories, uses black- and butter-bean base recipes, doesn’t use butter in her bakes and instead experiments with unusual ingredients like avocados to help ensure the finished goodies are anything but dry.

As a one-woman band bakery, you can’t buy all 60 flavours every week (and remember they’re only diet-friendly when devoured one at a time!). Instead Cathy harnesses the power of Instagram and invites her followers to choose the coming week’s flavours – so get following if you want to have your say. If your favourite flavour doesn’t make the weekly edit, or you want something bespoke, Cathy also does private orders, where you can pick any of the flavours to include in your own unique box. Flavours range from Jammie Dodger Blondies and Biscoff Brownies to Lemon Meringue Blondies and Cornflake Crunch Brownies, with nearly every recipe being vegetarian and some being gluten free*.

Every Sunday at 7pm the website is restocked with the week’s treats for you to snaffle up. Around seasonal events, think Christmas, Valentine’s Day, Easter, Mother’s Day etc, there are special themed boxes that make the perfect gifts for someone you love.
